Ingredients

  • 3 LargeCarrots (Chopped)
  • 3 stalks of Celery (Chopped) For EACH serving
  • 1 Large Onion (Chopped)
  • 4 Cloves Garlic (Minced)
  • 2 Cups Lentils (Dried, Rinsed and Picked over)
  • 1 Teaspoon Ground Thyme
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Paprika
  • 5 Cups Chicken Broth (REDUCED SODIUM)
  • 1 Cup Water

Instructions

  1. 1. Add all ingredients into the crockpot.

    2. Cook on low for 6-8 hours.

    3. Portion into 6 servings.

    *Whatever is left can be frozen for future use.

Tasty Tips:
1. Consider adding BALSAMIC VINEGAR before serving!
2. Locatelli cheese (such as Pecorino Romano) 1tbsp sprinkled lightly on top for added flavor.
