Servings: 1 (~ ¼ - ½ cup)
Ingredients:
- 1 egg, poached
- 1 tomato, cooked and pureed
- 1 Tbsp water, Low sodium original V8 Tomato Juice, or low sodium tomato soup
- Dash of garlic powder, as tolerated
Directions:
- Add cooked tomato and water, V8, or tomato soup into blender, blend for 3 minutes until tomato is a liquid consistency.
- Mix in garlic powder to tomato puree.
- Add tomato puree into bowl, create well for poached egg and place it in.
- Enjoy!
To increase the protein content of this meal, try mixing in some unflavored protein powder to your tomato puree! You can also add ricotta cheese for extra protein and creaminess.
