Poached Egg and Farina

Ingredients

  • ¼ - ½ cup cooked farina
  • 1 egg
  • Spices/seasoning of your choice!

Instructions

  1. To poach your egg: Gently boil salted water in a large pot (bubbling but not rolling boil). Crack your egg into the water, making sure the yolk stays intact. Boil for 2.5-3 minutes, the yolk should still be loose. Then, remove with a slotted spoon.
  2. Transfer egg on top of farina. Season with sugar-free spices/seasonings of your choice. Enjoy!

For those on stage 2 and beyond!

Oats and Fruit

Ingredients

  • ¼ - ½ cup of cooked oatmeal
  • A few spoonfuls of yogurt
  • Canned fruit of your choice
  • Sugar-free flavorings of your choice!

Instructions

  1. This one is really simple! Flavor your oatmeal however you prefer – opt for sugar-free!
  2. Top with a few spoonfuls of yogurt, canned fruit and any other (sugar-free) flavorings you would like. Enjoy!

For those on stage 4 and beyond!

Pear and Cottage Puree

Ingredients

  • 2 tbsp plain yogurt
  • A few pieces canned, frozen or fresh pear
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • A splash milk of choice
  • 1/3-1/2 cup cottage (or ricotta) cheese

Instructions

  1. Place first 5 ingredients (yogurt through milk) into blend, blend until completely smooth
  2. Serve on top of cottage or ricotta cheese. Enjoy
  3. Alternatively, you can blend all 6 ingredients together!

For those on stage 3 and beyond!

Eggs & Salsa

Ingredients

  • 1-2 tbsp salsa
  • 2 tbsp black beans
  • 2 scrambled eggs
  • 1 tbsp shredded cheddar cheese
  • 2 tbsp cooked spinach

Instructions

  1. Layer ingredients in the following order: salsa, black beans, eggs, cheese, spinach.
  2. Eat immediately, or store in the fridge for 3-4 days.
  3. When ready to eat warm in the microwave for 1.5-2 minutes!

For those 6 weeks out from surgery or more!
